The secret ingredient to the healthy crunch: brown rice cakes! While the rice cakes creates the perfect crunch, the peanut butter and maple syrup create the glue. And then the chocolate simply melts in your mouth to create the most heavenly dessert ever.

These bites are ready in under 20 minutes, so I love to throw them together whenever I’m craving a sweet treat.

This recipe is vegan, gluten free, and refined sugar free. The ingredients are loaded with protein, whole grains, and healthy fats that will leave you satisfied and nourished.

Easy Vegan Chocolate Peanut Butter Bars (No Bake!)

Ok…let’s talk about these healthy ingredients! Even though these bars are overflowing with nutrients, they taste like a bite out of peanut butter chocolate heaven.

Simple ingredients in this recipe:

  • brown rice cakes
  • all natural peanut butter
  • 100% pure maple syrup
  • Melted chocolate. I love using Hu.

How to make vegan chocolate peanut butter candy bars:

  • crush the rice cakes into small pieces
  • mix the peanut butter and maple syrup until smooth
  • combine the peanut butter and maple syrup with the rice cakes
  • press the mixture into a parchment-lined pan
  • pour melted chocolate over the top and smooth it out
  • chill in the freezer for 10 minutes until set
  • slice and enjoy!

Storage tips:

Store these in an airtight container in the refrigerator for up to 7 days. You can also freeze them for up to 1 month.

Easy No-Bake Vegan Chocolate Peanut Butter Bars

Ingredients
  

  • cups brown rice cakes crumbled
  • cup all natural peanut butter
  • ¼ cup pure maple syrup
  • ½ dark chocolate bar I use Hu

Instructions
 

  • In a medium sized bowl, mix the crumbled rice cakes, peanut butter, and maple syrup
  • Transfer that mixture to a parchment lined baking pan (loaf or cake pan). Press it down to compact it
  • Melt the chocolate and pour it onto the base
  • Freeze for 10 minutes
  • Enjoy!

peanut butter — any nut or seed butter
